Cheesy Cauliflower Egg Bites
Ingredients
1/4 head Cauliflower (large, cut into florets)
3 ozs Cheddar Cheese (shredded)
2 Egg (whisked)
1/4 tsp Oregano
1/4 tsp Onion Powder, Sea Salt & Black Pepper (to taste)
Directions
Preheat the oven to 375°F (190°C) and grease or line a mini muffin tray.
Steam the cauliflower for eight to 10 minutes until tender. Chop into fine pieces.
In a bowl, mix the chopped cauliflower, cheese, egg, oregano, onion powder, salt, and pepper until well combined.
Add approximately 1/3 cup of the egg mixture to each muffin cup. Use a spoon to ensure the mixture is flat and even.
Bake for 15 to 18 minutes until golden brown and firm in the center. Let cool slightly before serving. Divide evenly between plates and enjoy!
Notes
Leftovers: Refrigerate in an airtight container for up to three days. Freeze for up to one month.
Serving Size: One serving is two cheesy cauliflower bites.
