Dairy-Free Coconut Cream Bark

Ingredients

  • 1 cup of coconut cream or coconut yogurt (my favorite is cocojune!)

  • 1 tbsp honey or maple syrup, to taste

  • 1/4 cup frozen raspberries

  • 1 tbsp Enjoy Life mini chocolate chips (I finely chopped a dark chocolate bar I had in my pantry)

  • Other toppings of choice including nuts, nut butter drizzle, granola, and other fruits

Directions

  1. Mix the coconut cream or yogurt with the sweetener of your choice (I used honey!) and sweeten to taste.

  2. Line a small 9x7 (or similar) baking sheet (I used the smallest from this set) with parchment paper

  3. Pour out your mixture and smooth flat onto the sheet

  4. Sprinkle the frozen raspberries and chocolate over the top of the mixture and evenly distribute

  5. Freeze for 1-2 hours until solid. Enjoy frozen!

Notes

  • If you’d like to store the bark, you can break it up and store in a glass container in the freezer

  • Enjoy within a few minutes of taking out of the freezer
