Date Caramel Apple Rings

Ingredients

  • 1 cup Pitted Dates (soaked until softened)

  • 1/3 cup Canned Coconut Milk

  • 2 Apples (medium)

  • 1/4 cup Dark Chocolate Chips

  • 2 tbsps Walnuts (chopped)

  • 1/4 tsp Sea Salt (flaky)

Directions

  1. Add the dates and coconut milk to a blender or food processor. Blend until smooth, scraping down the sides as needed.

  2. Slice the apples into approximately 1/2-inch (1.25 cm) rounds and cut a hole in the centre of each slice to resemble a donut. Alternatively, core the apples and then cut into rounds.

  3. Spread the date caramel onto each apple ring and top with chocolate chips, walnuts, and flaky salt. Enjoy!

Notes

  • Leftovers: Refrigerate the date caramel for up to five days. Cut the apples and assemble when ready to eat.

  • Serving Size: One serving is two apple rings.

  • No Coconut Milk: Use cashew, almond, or cow milk instead. You can also use half & half here for a thicker texture.

  • Additional Toppings: Hemp seeds, chia seeds, or shredded coconut.
