Blueberry Banana Oat Bars
Ingredients
2 cups Frozen Blueberries
1/4 cup Raw Honey (divided)
3 tbsps Chia Seeds
2 Bananas (medium, ripe)
1/2 cup Cashew Butter (smooth)
2 1/2 cups Oats (rolled, divided)
1 tsp Coconut Oil
Directions
In a saucepan over low heat, combine the frozen berries and half of the honey. Simmer for eight to 10 minutes, stirring occasionally until it starts to thicken. Stir in the chia seeds and simmer for another four to five minutes. Remove from the heat and let cool for five minutes. It will thicken more as it cools.
Preheat the oven to 350ºF (175ºC). Line a baking dish with parchment paper.
In a large bowl, mash the banana until smooth. Add the remaining honey and the cashew butter. Add 4/5 of the oats and mix until well combined. Reserve the remaining oats for topping later.
Pour the oat and banana mixture into the baking dish and press it into an even layer. Spread the mixed berry compote over the top.
Add the oil to the reserved oat mixture. Use your hands to crumble it, then sprinkle it on top of the berry compote.
Bake for 17 to 18 minutes until the top is slightly golden. Let cool for five minutes before cutting evenly into bars. Enjoy!
Notes
Leftovers: Refrigerate in an airtight container for up to four days.
Serving Size: An 8 x 8 inch (20 cm x 20 cm) pan was used to make six servings. One serving is one bar.
Oats Measurement: If you are making this recipe for six servings, reserve 1/2 cup or 1/5 of the oats for the topping.
