Creamy Shredded Chicken Salad Wrap
Ingredients
8 ozs Chicken Breast
1/3 cup Mayonnaise
1 tsp Dijon Mustard
1 stalk Celery (diced)
1 Apple (small, chopped)
1/4 cup Red Onion (diced), Sea Salt & Black Pepper (to taste)
2 Whole Wheat Tortilla (large)
Directions
To make the shredded chicken, bring a pot of water to a boil. Reduce to a gentle simmer, add the chicken and cover. Let simmer until the chicken is cooked, about 15 to 20 minutes. Remove the chicken and transfer it to a bowl. Shred it into pieces using two forks.
Add the mayonnaise, mustard, celery, apple, onion, salt, and pepper. Mix well to combine.
Place the tortillas on a flat surface. Divide the chicken mixture evenly between the tortillas, placing the mixture in the center. Roll each one up tightly into a wrap. Enjoy!
Notes
Leftovers: Best enjoyed fresh. Refrigerate ingredients separately in airtight containers for up to two days.
Serving Size: One serving is one wrap.
Gluten-Free: Use a gluten-free tortilla.
No Mayonnaise: Use Greek yogurt instead.
