Three Cheese Meatloaf Bites
Ingredients
1 cup Ricotta Cheese
2 ozs Mozzarella Cheese (shredded, divided)
1/4 cup Parmigiano Reggiano (finely grated, divided)
1 lb Extra Lean Ground Beef
1/2 Yellow Onion (medium, diced)
1 Garlic (clove, minced)
1 Egg
1 cup Tomato Sauce (divided)
Sea Salt & Black Pepper (to taste)
2 tbsps Parsley (chopped)
Directions
In a bowl, combine the ricotta, half the mozzarella, and half the parmesan. Set it aside.
Preheat the oven to 400°F (205°C) and grease a muffin tray. In a separate, large bowl, combine the beef, remaining parmesan, onion, garlic, egg, half of the tomato sauce, salt, and pepper.
Divide half of the meat mixture evenly into each muffin cup. Then, divide half of the cheese mixture evenly into each muffin cup. Lastly, top each muffin cup with the remaining meat mixture.
Cook for 15 to 18 minutes or until cooked through. Remove from the oven and top each meatloaf bite with the remaining tomato sauce and cheese mixture. Place the tray back in the oven for four to five minutes until the cheese has melted and the sauce is warmed through.
Once they've cooled slightly, remove the meatloaf bites from the muffin tray. Top with parsley and enjoy!
Notes
Leftovers: Refrigerate in an airtight container for up to three days. Freeze for up to three months.
Serving Size: One serving is two meatloaf bites.
Additional Toppings: Chili flakes.
