Greek Style Chicken Drumstick & Potatoes

Ingredients

  • 2 tbsps Extra Virgin Olive Oil

  • 2 tbsps Lemon Juice

  • 2 tsps Oregano (dried)

  • 1 tsp Sea Salt

  • 1/4 tsp Black Pepper (ground)

  • 1 lb Chicken Drumsticks

  • 2 cups Mini Potatoes (halved)

Directions

  1. In a large bowl, whisk together the oil, lemon juice, oregano, salt, and pepper. Add the chicken and potatoes. Toss well to coat. Cover, and refrigerate for 30 minutes.

  2. Preheat the oven to 425ºF (220ºC). Line a baking sheet with parchment paper.

  3. Arrange the chicken and potatoes in an even layer on the baking sheet. Pour the marinade over top.

  4. Cook in the oven for 30 to 35 minutes until the chicken is cooked through and the potatoes are tender. Spoon the cooking juices over the chicken and potatoes halfway through cooking.

  5. Divide evenly between plates. Drizzle with the pan juices and enjoy!

Notes

  • Leftovers: Refrigerate in an airtight container for up to three days.

  • Serving Size: One serving is approximately two chicken drumsticks with one cup of potatoes.
