Strawberry Cashew Butter Collagen Bites
Ingredients
1 1/2 cups Oats
2 tbsps Unsweetened Shredded Coconut
1/3 oz Collagen Powder
1/8 tsp Sea Salt
2 tbsps Cashew Butter
2 tbsps Plain Greek Yogurt
1/3 cup Strawberries (chopped)
1 tsp Vanilla Extract
2 tbsps Water
2 ozs Freeze Dried Strawberries
Directions
Add the oats, shredded coconut, collagen, and salt to a food processor. Blend until it starts to combine and form small, crumbly pieces.
Add the cashew butter, yogurt, strawberries, vanilla, and water. Blend until well combined. Add the freeze-dried strawberries and pulse until they break up slightly.
Refrigerate the mixture for 30 to 35 minutes. Use a 1-inch (2.5 cm) cookie scoop or a teaspoon to scoop out the mixture and roll it into balls. Continue until all of the mixture has been used.
Chill in the fridge for 20 to 30 minutes to allow them to set. Enjoy!
Notes
Leftovers: Refrigerate in an airtight container for up to one week. Freeze for up to one month.
Serving Size: One serving is two balls.
No Cashew Butter: Use almond or peanut butter instead.
No Collagen Powder: Replace with additional oats or vanilla protein powder instead.
No Freeze Dried Strawberries: Use cranberries, another dried fruit, or simply omit.
